Anhydrous Chongqing chicken pot

Ingredients:
Farm chicken 1/2, 1 celery, 1 asparagus lettuce, 2 parsley, 1 small onion, 1 pepper, 1 red chili, 3 small red peppers, 1 ginger, 1 scallion, 4 cloves of garlic, 1 can of beer, 1 tbsp of thick broad-bean sauce, 1 tsp of chicken essence, 1 tsp sugar, 2 tbsp light soy sauce, 1 tsp dark soy sauce, 1 tsp vinegar, 1 tbsp cooking wine, appropriate amount of chili powder
Recipe:
1. Peel and cut the asparagus lettuce, cut ginger and garlic into slices, cut scallion, celery and parsley into sections, shred onion, green and red peppers, and chopped red chili.
2.Clean chopped chicken, put is in the bowl and add the right amount of cooking wine.
3. Add 1 tablespoon of light soy sauce.
4. Add teaspoon of chicken essence.
5. Put in ginger, half of scallion and garlic.
6. Fully stir and marinate for more than half an hour.
7. Ready to make spicy oil, put the right chili powder into a small bowl.
8. Put 2 tablespoons of oil in the pot, add the remaining scallion, ginger and garlic after heated.
9. After fry out the aroma, pour heated oil into the small bowl and stir well.
10.Use another pot to heat a little oil, after heated, put in chopped red chili and peppers.
11. After flavor good, put in onion to stir fry for a moment.
12.Put chicken, scallion, ginger and garlic into the pot, and keep stir fry.
13. Add 1 tablespoon of light soy sauce after the chicken become white.
14. According to personal taste to add 1 tablespoon thick broad-bean sauce.
15. Then add a little dark soy sauce.
16. Add the right amount of vinegar.
17. Finally add 1 tsp sugar and continue to stir fry.
18. Stir fry until chicken skin into a bright yellow, add the right amount of beer, to 2/3 level of the chicken.
19. Then according to personal taste to add the right amount of homemade spicy oil, after boiled with big fire, turn to small fire and simmer for 10 minutes.
20. Put asparagus lettuce, celery, green  and red pepper into the pot.
21. After stir, continue to cook with big fire for 5 minutes.
Tips:
1. Before marinated chicken does not boiled in the water, otherwise it will difficult to tasty.
2.The thick broad-bean sauce is spicy, based on personal taste to add the right amount.
3. Cook with beer instead of water can remove fishy, and alcohol will be distributed in the heating process, there will be no heavy taste of wine.
4. Put a little vinegar can make meat more tender, you can add a little less.
