Anhydrous baked Mandarin fish

Ingredients:

Ginger
Shallot
Rice wine
Millet pepper
Steamed fish soy sauce
Recipe:

1.Pour a little oil in enamel pan and  the bottom of the pan should brush with the oil. lay a large number of ginger at bottom and then add shallot.
2.Wash the fish and put it in the pan, and sprinkle some ginger, scallion and pour 2 tablespoons rice wine.
3.Cover the lid and use the high temperature to simmer until generate the steam. Then continue to steam 3 minutes, and turn a small fire for 1 minute. Do not cover the lid after turn off the fire. Use another pot to stir fry the shallot, ginger and millet pepper, and pour on the fish.
4.Mix thoroughly a little steamed fish soy sauce with warm water (if only the steamed fish soy sauce will be salty), and pour into the fish to complete.
